White Chocolate Green Tea Cookies

Green tea and cannabis are both medicinal botanicals with cultural histories spanning the globe for many centuries, but modern science has discovered another connection. In 2010, the Phytomedicine journal published a clinical study with a title that says it all: "Tea catechins' affinity for human cannabinoid receptors." That's right, the compound catechin in green tea binds to the same cannabinoid receptor (CB1) as tetrahydrocannabinol (THC), which likely contributes to green tea's "anti-inflammatory and neuroprotective activities." Both botanicals are also fragrant, and what better way to double down on flavor and therapeutic impact than by combining them in white chocolate green tea cookies made with Défoncé artisan chocolate. 

EQUIPMENT:

Mixer
Two Mixing Bowls
Non-Stick Baking Sheets

INGREDIENTS:

3/4 Cup of Melted Unsalted Butter
1 Egg
1 Egg Yolk
1 Tablespoon Vanilla Extract
1/2 Cup Sugar
2 Cups of All-Purpose Flour
1 Tablespoon Green Tea Powder (Matcha)
1 Cup Packed Brown Sugar
1/2 Teaspoon Baking Soda
Défoncé White Chocolate
Salt

Preheat the oven to 325°F. While the oven heats up, sift salt and baking soda in a mixer. Add sugar and brown sugar, and continue to mix for three minutes. Add green tea powder and mix. Now grab a second mixing bowl, combine the egg yolk, egg, melted butter and vanilla, and mix thoroughly. Now combine the ingredients from the two bowls and mix together. Chop the Défoncé white chocolate bar into smaller pieces (or take white chocolate chips for non-infused cookies), and add to the bowl as it continues mixing. 

Once the mixture is thoroughly blended, scoop out the dough and roll into tablespoon-sized balls. Now place the dough balls on a non-stick baking sheet (alternatively, you can grease regular baking sheets or line them with parchment paper) about two or three inches apart. Place the baking sheet into the oven, and bake for eight to 10 minutes. Remove the baking sheet from the oven and allow the cookies to cool for two or three minutes before transferring to a wire rack. Allow the cookies to cool completely on the wire rack and then enjoy.
